Vitamins A to Z

Vitamins are defined as a group of organic substances that are required in the diet of humans and animals for normal growth, maintenance of life, and normal reproduction. Vitamins are generally classified according to their solubility in water or fats. The fat-soluble vitamins are A, D, E, and K; the B complex and C vitamins are water soluble.
Vitamins and minerals are called essential nutrients, meaning they must be supplied by the diet because the human body cannot make them. A recent study in the June 2202 issue of the Journal of American Medical Association reports that "suboptimal intake of some vitamins, above levels causing vitamin deficiency, is a risk factor for chronic diseases and common in the general population, especially the elderly"
