Healthy Oils and Fatty Acids

Fatty Acids (FA's) are organic acids found in fats and oils. They are generally classified as saturated or unsaturated. Essential Fatty Acids (EFA's) are polyunsaturated FA's and are termed essential because they are required by the human diet. This means that they must be obtained from dietary sources because they can not be synthesized in our bodies. EFA's such as those found in fish, flax and borage oil (Omega 3's & Omega 6's) are important nutrients that support a healthy immune system, healthy brains, benefit the cardiovascular system, and control excessive inflammation. They are important precursors for the synthesis of cell mediators (prostaglandins and leukotrienies). These cell mediators play an important role in human physiology and can affect coagulation, inflammation and proliferation of certain cells.
